Quick and Easy Chocolate Granola

This homemade granola is super simple to make and is a delicious, healthy way to start the day off right! Full of healthy grains, nuts, and seeds, with the bright flavor of dried cranberries, this granola is delicious by itself, topped with your favorite milk, or as a topping for yogurt.

Ingredients
  

  • 8 Cups Organic Oats
  • 1 Cup Pumpkin Seeds
  • 1/2 Cup Ground Flax Seeds
  • 2 Cups Dried Cranberries
  • 2/3 Cup Olive Oil
  • 1 Cup Honey
  • 1-2 Tbsp Organic Cocoa Powder or to taste
  • 1 tsp Salt optional

Method
 

  1. Preheat Oven to 300 degrees.
  2. Add olive oil to small saucepan and heat on low.
  3. Add organic cocoa powder to olive oil. Use milk frother to break up clumps and mix well.
  4. Add honey to olive oil/cocoa powder mixture. Stir gently with spatula.
  5. Turn stovetop off and let liquid ingredients rest.
  6. Add oats, slivered almonds, pumpkin seeds, and ground flax to stand mixer bowl.
  7. Mix briefly on low using dough hook (for Bosch) or flat paddle (Kitchen Aid) attachment.
  8. Add olive oil/cocoa powder/honey mixture to dry ingredients.
  9. Mix on low until dry ingredients are evenly coated.
  10. Add salt, if desired.
  11. Line 2 large baking sheets with parchment paper and spread a thin, even layer of granola on each.
  12. Bake for 35-40 minutes, mixing about halfway, if desired.
  13. Once fully baked, add dried cranberries and mix well using silicone spatula.
  14. Let granola mixture rest on baking sheets till cool.
  15. Once cool, store in air tight container.
